Andy how soon after a WC should you check the nitrates? Do you go by water turn over time? My water with two filters turns over about 4 to 5 times per hour.

Can you take a look see under the house where you want the tank and take a few photos with a tape measure next to the joist? Like Aiken said you might be fine but you don't know what someone has done over the years until you look.
Any well company could tell you how deep your well is. Is your pump above ground or a submersible well pump?
